The Deli counter at Zingerman’s offers a wide variety of sliced meat, including sandwich cuts as well as cured meats. Perhaps you have curious about the selection or maybe overwhelmed and not sure what you might enjoy. This class will explore the topic of cured meats–we’ll go in depth into the process of preserving and flavoring meats. Join our Deli Event Coordinator and American Cheese Society Certified Cheese Professional Tessie Ives-Wilson and Deli meat monger Kevin Bowker as they discuss different styles of curing – whole muscle, salumi, and even pates. This is an introductory level class that will help you understand the selections at our meat counter and what to look for in a great cured meat. You will learn and also TASTE! Please note: this is (obviously) not a class for vegetarians. We will be tasting pork, beef and chicken products.
