Enjoy a short presentation from Zingerman’s staff Scholarship winner, Chad Hogan, who wrote a vision for selling fresh pasta in Kerrytown–his prize took him to Northern Italy to learn traditional pasta-making techniques from the masters in Emilia-Romagna.
While demonstrating making fresh pasta, Chad will discuss his original scholarship-winning vision for fresh pasta at the Deli, talk about ingredient and material sourcing, tell us about his long-ranging trip to Bologna and beyond, and give an update on his progress here at the Deli and in his home kitchen. We’ll also enjoy a few small plates of Chad’s fresh pasta, dressed simply with ingredients from our Deli’s Specialty Foods department, and a tasting pour of vino as well!
